Spiced Sweet Potato & Smoked Chicken Salad


Healthy... Flavoursome.... Perfect for work lunches

Ingredients

 

  • 1 sweet potato-diced
  • 1 spanish onion-diced
  • Olive Oil*
  • 1tbs Miris Moroccan Spice Blend*
  • ½ bunch kale-chopped finely
  • ½ punnet roma tomatoes- halved
  • 1 packet garlic nibbles*
  • Murray River sea salt*
  • 1 (200gms) Smoked Chicken Breast- shredded*
  • Milawa Balsamic or Honey Mustard Dressing*

Method

  1. Method:

    • Mix sweet potato & onion in olive oil and Moroccan spice
    • Place on a baking tray and roast until close tender and then add the tomatoes and kale on top of the other veggies for the last ten minutes or so just to warm
    • Shred chicken into a large mixing bowl, crush in garlic nibbles
    • Add in the roast veggies, season with salt and pepper and dress with mustard dressing
